Brewing Articles, etc.
Here is a list of pdf's and Power Point presentations you can download plus an html page or 2. These are the manuscripts
of articles which were (or were intended to be) published in Brewing Techniques or other periodicals or
were presented at various brewing conferences or popular on the web. Etc.:
- Chlorine/Chloramine - the MS of an article which was published in BT in the spring of 1999. This MS contains
material which was edited from the published article in order to meet length limitations.
- Alkalinity - Part I - The first of a two part article on alkalinity and how to deal with it. These were offered to Brewing Techniques but were declined.
This part covers the definitions of alkalinity and hardness and methods for measuring them in brewing water.
- Alkalinity - Part II -The second in the two part alkalinity series. This part introduces Kolbach's residual alkalinity and discusses various means
for increasing or decreasing alkalinity and hardness.
- Measuring Alcohol Content -A set of notes describing in some detail the procedure for measuring the alcohol content of beer using the ASBC method. While the details of the procedures pertain to my particular
setup they should be adaptable to other situations. An error analysis is included.
- Measuring Diacetyl - The procedure I use for the measurement of diacetyl in beer - based on the ASBC method.
- Specific Gravity - An extensive set of notes on the various ways in which specific gravity is measured, calculated and used by brewers. Be advised that this monograph is not
complete with respect to the sections on the way in which specific gravity of sugar solutions change with temperature.
- Lager Beer - Slides from a lecture given 23 April 1997 at the now, alas, defunct Brew America.
- MCAB April 2002 - Slides from an MCAB IV talk on the specification of beer color using principal components.
- New Brewer Jul/Aug 2003 - Brewing Water - An Overview: MS of an article which appeared in New Brewer Jul/Aug 2003
- Cerevesia Fall 2004 - Alkalinity, malt phosphate and mash pH. A paper which appeared in Fall 2004 Cerevesia. Based on a lecture at the XI DeClerck Chair it discusses alkalinity and the
way in which malt phosphate neutralizes it thus lowering mash tun pH. To view this in html form click here.
- Water Acidification - HTML (thanks to the unknown gentleman and scholar who HTML-ized it) version of an old post to HBD (#2388, 4/2/97) on the subject of how to get water at a particular pH and alkalinity to a desired pH.
- Water Recipes - 54 recipes for the formulation of the water of well known brewing cities using deionized water and readily available (homebrew shop, drugstore) salts.
- Residual Alkalinity Chart - Plots water as alkalinity vs. effective hardness. Can be used to compare brewing waters, estimate RA and base malt mash pH and to determine calcium or acid additions necessary to establish a desired mash pH.
- Water Spreadsheet - Work in Progress! Computes Residual Alkalinity from water report data. Checks report for consistency. Computes result of common salt, acid, base additions and compares to desired profile. Uses Solver to approximate specified profile.
- ASBC Victoria June 2007 - Slides from ASBC Conference - 19 Jun 2007 Victoria, BC - specifying color by means of the SRM augmented by principal components (see MCAB above).
- Beer Color Spreadsheet - EXCEL spreadsheet which calculates SRM, augmentation coefficients and CIE color from beer absorbtion spectra. Also calculates color from SRM and coefficients and color of "average" beer with given SRM. Based on June 2007 ASBC presentation. Instructions included.
- SRM Values of Beers - Downloads an Excel spreadsheet with SRM data for several commercially available beers. BJCP Guide users may wish to buy these beers for practice.
- Kolbach's 1953 Paper - "The Effect of Brewing Water on the pH of Wort and Beer". Residual Alkalinity is defined and discussed in this seminal article. Kolbach first defined RA in 1941 but as much of the literature from that time was lost during WW II this paper is usually cited. Translated from the German

Movie Clips
These are brief clips which have been referred to in bulletin board postings and which are intended to illustrate some aspect of
the camera, process or behavior of the thing photographed. They are streamed Quicktime videos but the un-hinted versions are also available for download.
Sizes are indicated. Several minutes may be required for download of the larger ones. We are aware that Microsoft has taken some action to make it more
difficult for Windows users to view Quicktime content. There are workarounds but I haven't implemented them here yet.
